Simple winter breakfast recipe

One of my favorite start-the-day meals. And bonus: it’s super-easy to make, plus so nutritious your doctor will thank you. It’s a complete dish by itself and will fill you up and give you lots of energy for the entire morning. Lots of whole grains, fiber, fruit, antioxidants, calcium, Vitamin E…what’s not to like? Oh, and did I mention there’s chocolate in there?

CHOCOLATE CHIP OATMEAL

Ingredients:

1/2 cup old-fashioned rolled oats

1-1/4 cup whole or 2% milk

1/4 cup raisins

1/4 cup fruit (1 medium sliced banana or frozen blueberries work wonderfully)

Handful chopped walnuts or sliced almonds

Handful semi-sweet chocolate chips

1/2 tsp. vanilla extract (optional but yummy)

Dash of cinnamon

  1. The night before, mix oats, milk and raisins in large, microwaveable glass bowl. Cover and refrigerate overnight.
  2. In the morning, microwave oatmeal for 2-1/2-3 minutes on high. (Keep an eye on this, as the oatmeal can overflow. Using a large bowl can help prevent this.)
  3. Add the rest of the ingredients and mix well. If using frozen fruit, add immediately after taking the bowl out of the microwave so that it defrosts into the oatmeal right away. Enjoy!

Merci for the comment, aaonce! Let me know what you think. It’s a variation of a number of different oatmeal recipes, with the added luxury of chocolate chips. I mean, no matter what kind of day it turns out to be, at least you know you started it with chocolate. ;-)
